Apple Peanut Butter Oatmeal Cookies (Vegan)

Ingredients:
· 3/4cup
Rolled Oats
· 1/4cup
whole wheat flour
· 1/4tsp
Baking soda
· ½
teaspoon ground cinnamon
· ½
teaspoon cloves
· ¼
teaspoon nutmeg
· 1/4cup
Packed brown sugar
· 2tbsp
cane sugar
· 1/3
cup ground flax seed
· dash
of salt
· 1/2tsp
Vanilla
· 2tbsp
safflower
· 2tbsp
Apple sauce
· 4tbsp
Peanut butter
· ¼
cup of rice milk
· 1
apple, peeled and chopped into small pieces
Directions:
1.
Preheat oven to 350 degrees.
2.
In a large bowl, combine oats, flour, baking soda, sugars,
flax seed, spices, and salt.
3.
In a smaller bowl, combine the wet ingredients: vanilla,
safflower, apple sauce, rice milk, and peanut butter.
4.
Pour the wet mixture on top of the dry ingredients and mix
well. This can be challenging so you may need to use your hands.
5.
Once fully mixed in, scoop about two tbsp. of batter onto a
parchment paper lined baking dish.
6.
Put an even amount of apple pieces onto each cookie, flatten,
and then bake for around 30 minutes.
