Quick Chocolate Lava Cake (Vegan)

Last night, I was really stressed after coming home from work. I wanted to indulge in a chocolate cake, but I did not have a cake box nor did I have the energy to cook extensively. So, I opened up PETA’s Vegan College Cookbook and found a recipe for no-bake chocolate cake. This is a great cookbook because it contains so many quick and easy meal ideas that do not require a lot of cooking experience or utensils. I adapted this recipe a little, but here it is:



Ingredients:
·        Nonstick vegan spray
·        3 tablespoons vegan butter, softened
·        ¼ cup cane sugar
·        ¼ cup banana ( ½ banana) mashed
·        1 tablespoon unsweetened applesauce
·        1 teaspoon vanilla extract
·        ¼ cup almond milk
·        ½ cup all-purpose flour
·        2 tablespoons cocoa powder
·        ¼ teaspoon baking powder
·        Dash of salt
·        Vegan chocolate syrup (optional) (I use Nestle Nesquik brand)

Directions:
1.     In a small bowl, combine the margarine, sugar, banana, vanilla, almond milk, and applesauce and stir together.
2.   In another bowl, combine the flour, cocoa powder, baking powder, and salt.


3.   Stir the dry mixture into the wet until smooth.
4.   Spray a medium microwaveable bowl with the nonstick spray and pour the batter into it.


5.   Cover and cook for 2 ½ to 3 minutes or until cake-like. If your microwaveable bowl does not have a lid, take a large piece of wax paper so that when folded over, tightly covers the bowl. 

6.   Let the cake cool for 5 minutes.
7.   To serve, flip the microwaveable bowl upside down so the cake falls out. Cut into four pieces and drizzle with the chocolate sauce.
